The Lemon Meringue Pie Recipe with Chirpy !

For the crust :
- 2 cups flour
- 1/2 cup cold butter, cut into small pieces
- 1/3 cup powdered sugar
- 1 egg
- A pinch of salt
For the lemon filling :
- 2/3 cup fresh lemon juice (about 4 lemons)
- Zest of 2 lemons
- 3/4 cup sugar
- 3 eggs
- 1/2 cup butter, cut into small pieces
- 1 tablespoon cornstarch
For the meringue :
- 4 egg whites
- 1 cup sugar
- 1 teaspoon vanilla
- A pinch of salt
Here are the preparation steps :
- Preheat the oven to 350°F (180°C).
- Make the crust by mixing the flour, cold butter, powdered sugar, and salt in a bowl until it resembles sand. Add the egg and mix quickly to form a dough ball. Spread the dough in a 9-inch pie pan, poke the bottom with a fork, and chill for 30 minutes.
- Bake the crust for 15 to 20 minutes or until it is lightly golden. Remove from the oven and let it cool down.
