The recipe of sausage rolls with Fido !
To make this recipe, here are the necessary ingredients :
- 1 homemade or ready-to-roll puff pastry
- • 6 chipolata or Frankfurt sausages
- 1 egg yolk
- 1 tablespoon sesame or poppy seeds (optional)
- Salt and pepper
Here are the preparation steps :
- Preheat the oven to 180°C (400°F).
- Place the puff pastry on a clean work surface and cut it into 6 equal strips.
- Season the sausages with a little salt and pepper to taste.
- Place one sausage at the edge of each strip of puff pastry. Roll the pastry around each sausage, leaving the ends of the sausage visible.
- Place the sausage rolls on a baking sheet lined with parchment paper, making sure the edge of the pastry is underneath to prevent them from unrolling during baking.
- In a small bowl, lightly beat the egg yolk with a tablespoon of water. Brush the sausage rolls with the egg mixture, which will give them a beautiful golden color when baked.
- Sprinkle the sausage rolls with sesame or poppy seeds, if desired.
- Bake the sausage rolls for 20 to 25 minutes, or until they are golden brown and the pastry is cooked.
- Let the sausage rolls cool for a few minutes before serving. They can be enjoyed hot or at room temperature.

For an homemade puff pastry recipe :
• 250g flour
• 1 pinch of salt
Preparation steps :
- In a bowl, mix 250g of flour, a pinch of salt. Knead with your fingertips until the dough is crumbly. Add 5 to 6 tablespoons of cold water and continue kneading until the dough forms a smooth ball.
- Roll out the dough on a floured work surface into a rectangle about 30cm x 40cm, and 125g of soft butter cut into small cubes. Fold the bottom third of the dough towards the middle, then the top third over it. Turn the dough 90 degrees and roll it out again into a rectangle. Fold the dough again in the same way. This is called a “three-fold”.
- Wrap the dough in cling film and place it in the refrigerator for at least 1 hour.
- Remove the dough from the refrigerator and roll it out again into a rectangle. Make another three-fold, wrap it again in cling film and place it in the refrigerator for at least 1 hour.
- Repeat this folding and refrigeration step 2 or 3 more times, until you have made at least 3 folds in total. The dough should be very cold before using it.
- When you are ready to use the dough, roll it out into a thin rectangle and continue with the recipe from step 2 above. Prick the dough with a fork before baking to prevent it from rising too much during baking.
