The Lemon Meringue Pie Recipe with Chirpy !

To make this pie, here are the necessary ingredients :

For the crust :

  • 2 cups flour
  • 1/2 cup cold butter, cut into small pieces
  • 1/3 cup powdered sugar
  • 1 egg
  • A pinch of salt

For the lemon filling :

  • 2/3 cup fresh lemon juice (about 4 lemons)
  • Zest of 2 lemons
  • 3/4 cup sugar
  • 3 eggs
  • 1/2 cup butter, cut into small pieces
  • 1 tablespoon cornstarch

For the meringue :

  • 4 egg whites
  • 1 cup sugar
  • 1 teaspoon vanilla
  • A pinch of salt

Here are the preparation steps :

  1. Preheat the oven to 350°F (180°C).
  2. Make the crust by mixing the flour, cold butter, powdered sugar, and salt in a bowl until it resembles sand. Add the egg and mix quickly to form a dough ball. Spread the dough in a 9-inch pie pan, poke the bottom with a fork, and chill for 30 minutes.
  3. Bake the crust for 15 to 20 minutes or until it is lightly golden. Remove from the oven and let it cool down.
